LEGISLATIVE RESOLUTION commending Formaggio Italian Cheese Specialties
upon the occasion of celebrating its 25th Anniversary on June 1, 2016

WHEREAS, It is the sense of this Legislative Body to recognize the
achievements of those individuals and businesses which substantially
contribute to the economic vitality of their communities and the entire
Empire State; and
WHEREAS, Attendant to such concern, and in full accord with its long-
standing traditions, this Legislative Body is justly proud to commend
Formaggio Italian Cheese Specialties upon the occasion of celebrating
its 25th Anniversary at a Ribbon Cutting sponsored by the Sullivan Coun-
ty Chamber of Commerce on Wednesday, June 1, 2016, in Hurleyville, New
York; and
WHEREAS, An award winning fresh mozzarella manufacturer, Formaggio
Italian Cheese Specialties is owned and operated by President/CEO Antho-
ny Mongiello, affectionately known as The Big Cheese; and
WHEREAS, Throughout the past 25 years, Formaggio Italian Cheese
Specialties has been the proud recipient of numerous Gold Medals in the
Wisconsin Cheese Maker's Association's World Cheese Competition, and has
proudly transformed the deli industry by continuing to set trends; and
WHEREAS, Today, Anthony Mongiello faithfully continues his family's
legacy of making ingenious advances and top quality products; and
WHEREAS, In 1925, Lorenzo Mongiello established a specialty canning
corporation for ricotta cheese; he designed these metal tapered cans and
built machinery to produce them; his son, Angelo Mongiello, Sr. then
continued with his father's industrial creativity; and
WHEREAS, After watching how workers painfully molded mozzarella, with
their bare hands in boiling hot water, Angelo Mongiello, Sr. invented
the first automated mozzarella cheese making machine; he earned over a
dozen patents on industry related items, as well as custom built equip-
ment that Formaggio Italian Cheese Specialties still use today; and
WHEREAS, As a young man, Anthony Mongiello accompanied his father,
Angelo, to a product-pitching meeting at the Polly-O offices where he
saw his father introduce the incredibly successful Mozzarella Cheese
Snack Stick, or as we know it today, the Polly-O String Cheese stick and
its many copies; and
WHEREAS, This experience set Anthony Mongiello on the path of product
revolution and furthered the family's tradition of food industry inno-
vation; at the age of eighteen, he changed the food industry when he was
issued his first patent for the Stuffed Crust Pizza; and
WHEREAS, Anthony Mongiello's passion for food innovation led him to
become a master cheesemaker, creating over 60 different food items which
are sold in thousands of stores coast to coast, as well as interna-
tionally; these products have earned him more than 12 prestigious domes-
tic and international awards for flavor profiles, product innovation and
packaging; and
WHEREAS, In addition, Anthony Mongiello hosts a live radio cooking
show called "Kings in the Kitchen," currently heard in New York and
Pennsylvania, the show helps people create five-star, gourmet meals with
minimal effort and little cost; and
WHEREAS, Anthony Mongiello's uncanny ability to understand the move-
ment of products on store shelves, is a testament to the passion he has
for giving consumers what they want: fulfillment, quality and original-
ity; whether it is in international retail or club stores, the local
grocery down the street, or a gourmet shop in New York City, he is
bringing his passion for trendspotting, trendsetting, and innovation to

new arenas of the consumer culture, including the internet, television,
radio, food clubs and retail stores; and
WHEREAS, It is with great pleasure that this Legislative Body acknowl-
edges this exceptional business and its contributions to the local and
State economies, fully confident that it will continue to enjoy the
sparkling successes it has experienced thus far; now, therefore, be it
RESOLVED, That this Legislative Body pause in its deliberations to
commend Formaggio Italian Cheese Specialties upon the occasion of cele-
brating its 25th Anniversary on June 1, 2016; and be it further
RESOLVED, That a copy of this Resolution, suitably engrossed, be tran-
smitted to Anthony Mongiello, Owner/Operator, Formaggio Italian Cheese
Specialties.
