HONORING The Hollow Bistro & Brew upon the
occasion of its designation as recipient of the
Business of the Year Award by the Clarence Chamber
of Commerce on March 2, 2017
WHEREAS, It is the sense of this Legislative Body to recognize
illustrious culinary establishments which have positively impacted and
substantially contributed to the vitality of their communities; and
WHEREAS, This Legislative Body is justly proud to honor The Hollow
Bistro & Brew upon the occasion of its designation as recipient of the
Business of the Year Award by the Clarence Chamber of Commerce, to be
celebrated at its 45th Annual Awards Dinner on Thursday, March 2, 2017,
at Samuel's Grande Manor, in Williamsville, New York; and
WHEREAS, Since 2010, the Yu Family, owners and operators of The
Hollow Bistro & Brew, have been an integral part of revitalization
efforts of "The Hollow," and have been committed to preserving one of
Clarence's historic treasures; and
WHEREAS, The Hollow Bistro & Brew was established in a building
which has a long history in the Clarence Hollow; built in 1804, it was
the site of the Clarence Classical School, the first private school in
Erie County; and
WHEREAS, In the 1890s, the structure was moved to its current site
in order to make way for the railway that crossed Main Street; through
the years, the building housed a bakery, a hardware store, a deli, and
an ice cream parlor before The Hollow Bistro & Brew was founded a
century later; and
WHEREAS, Decorated with classic Asian-American decor, using bamboo,
Chinese panels, and various Asian antiques, The Hollow Bistro & Brew is
a popular spot for locals and travelers looking for a unique place to
eat quality food; and
WHEREAS, Under the direction of General Manager, Katie Yu, a new
dining room, patio and private room were built to accommodate larger
groups and events in May of 2016; and
WHEREAS, The remarkable success of The Hollow Bistro & Brew is due
in large part to the efforts of the Yu family, whose warmth and
hospitality are easily recognized by their loyal patrons; this dynamic
family is well-versed in customer service and truly makes everyone who
walks through their door feel like family; and
WHEREAS, It is with great pleasure that this Legislative Body
acknowledges this exceptional business and its contributions to the
local and State economies, fully confident that it will continue to
enjoy the sparkling successes it has experienced thus far; now,
therefore, be it
RESOLVED, That this Legislative Body pause in its deliberations to
honor The Hollow Bistro & Brew upon the occasion of its designation as
recipient of the Business of the Year Award by the Clarence Chamber of
Commerce; and be it further
RESOLVED, That a copy of this Resolution, suitably engrossed, be
transmitted to Katie Yu, General Manager, The Hollow Bistro & Brew.
