COMMEMORATING the 37th Anniversary of Crabtree's
Kittle House

WHEREAS, The State of New York takes great pride in acknowledging
the esteemed businesses and their owners who have distinguished
themselves in their community; and

WHEREAS, John Crabtree will celebrate 37 years as owner of
Crabtree's Kittle House on October 10, 2018; and

WHEREAS, Before entering the restaurant business, John Crabtree was
an administrative assistant to the Deputy Minority Leader for the New
York State Assembly; and

WHEREAS, John Crabtree's father owned Crabtree's Plaza Inn at the
time; the establishment tragically burned down and John helped his
father to rebuild; and

WHEREAS, John Crabtree did not expect to stay in the restaurant
business, but his father purchased an old farmhouse in Chappaqua in
1981; the two were supposed to repair the building and sell it, but,
five years later, he realized he was staying in the business; and

WHEREAS, John Crabtree wanted Crabtree's Kittle House to rise above
other local restaurants, and he began a wine program in 1986 that became
a precursor to today's popular wine tastings; and

WHEREAS, John Crabtree brought in vintners from Italy and France to
help with this program; the collection that started with approximately
100 wines, grew to about 6,000 wines at one time, and is now at
approximately 5,000; and

WHEREAS, John Crabtree also took care to provide a menu that
complimented his fine wines, and is an active supporter of local
farmers; and

WHEREAS, John Crabtree should be commended for his success and
longevity in the restaurant industry; now, therefore, be it

RESOLVED, That this Legislative Body pause in its deliberations to
commemorate the 37th Anniversary of Crabtree's Kittle House; and be it
further

RESOLVED, That a copy of this Resolution, suitably engrossed, be
transmitted to John Crabtree.
